Surprise your family, preparing these delicious and easy vegan meatballs with chickpeas and quinoa.
Needed items are:
- 200 g chickpeas (soaked the night before)
- 1 k.ch. quinoa, pre-cooked
- 1 zucchini
- 2 scallions
- 2 sprigs fresh garlic
- Half a bunch of dill
- 1 tsp sesame
- 1 tsp linseed
- Himalayan salt
- Spices to taste
Method of preparation:
Cook quinoa (boil about 15 minutes). Place in a blender squeezed and soaked the night before chickpeas, add quinoa, chopped onion and garlic, dill, salt, sesame, flax seed and other spices. Blend. Into the ready mix, add grated zucchini and stir until a uniform mixture.
Form meatballs. Cover bottom of pan with baking paper. Meatballs bake until browned in a preheated 200 degrees oven. Serve warm with salad, hummus or sauce of your choice.
