ASTA is a unit of measurement for the intensity of red pepper color - a key indicator of its quality. According to the already repealed BDS 466-80, ground red pepper is produced in 5 qualities, the difference being mainly in the color - dye content in ASTA units:
- Superb delicacy - at least 175 ASTA
- Delicatessen - at least 145 ASTA
- Extra - minimum 120 ASTA
- First quality - minimum 105 ASTA
- Second quality - at least 75 ASTA
The higher the value of ASTA, the stronger and more saturated the color, and the richer and more noticeable the effect on the final product during cooking. The red pepper that is currently widely available on our market is about 80 ASTA.

Red pepper 180 ASTA has a deep red color, soft, slightly sweet noble taste and a characteristic rich aroma of well-ripened red peppers. It is not sterilized, it is not irradiated, it does not contain GMOs and artificial colors.

Red pepper as a kitchen spice is obtained from dried red peppers, ground into a powder, which includes the fruiting body and in some cases the end of the stem with the seed nest.
In Bulgarian cuisine, red pepper is a universal spice. It is added to all kinds of soups, vegetable dishes, meat dishes, poultry, fish and more. Used for seasoning cheeses, eggs, various types of pates and salads. Sprinkled with paprika shortly before serving, these dishes look more aesthetically pleasing, but do not carry the full range of its aroma. When warmed, pepper gives off its aroma completely and therefore it is good to add it to dishes during cooking.
It is important to know that you should not leave it in boiling fat, because when frying its sugar content is caramelized and it gets a bitter taste and dark brown color. Therefore, seconds after adding the pepper to the fat, you should add water or broth or other elements of the dish that contain water, such as meat and vegetables.
Red pepper is a preferred ingredient in various spice blends. In our country the most popular are the colored salt and the curry. It successfully combines with other spices because of its soft and unobtrusive aroma.
