White mustard are the seeds of an annual herbaceous plant / Sinapis alba / of the cruciferous family, which reaches a height of 60-70 cm. The flowers are yellow, gathered in racemes, and the fruit is a pod in which the seeds are collected. It is distributed throughout Europe, Asia, Africa and North America.
In cooking, white mustard is mainly used for making mustard. It is made from ground grains that are pressed to remove the oil. The skimmed mass is ground again to a fine flour, which is mixed with vinegar or wine. Season with salt, sugar or honey and season with fresh or dried spices to improve the taste. Tarragon is most often used, but cinnamon, cloves, allspice, garlic, etc. can also be added. Some brands of mustard contain turmeric, which gives it a bright yellow color.
White mustard is also used for canning vegetables, combining well with allspice, pepper and bay leaf. With the ground spice you can season dishes of beef and poultry, game and fish.
In medicine, mustard seeds are used for colds and as an appetite stimulant that enhances the secretion of gastric juice. It also has anti-inflammatory and antiseptic properties.
