500g Samardala
Samardala is a herbaceous annual plant of the Nectaroscordum bulgaricum family.
In Bulgaria it is found growing wild mainly in Southeastern Bulgaria - the region of Stara Zagora, Sliven, Strandzha.
It is characteristic that it loses its smell when dried. To preserve the aroma, the plant is ground and the resulting slurry is applied to salt. After the salt dries, lumps are formed, which are rubbed through a sieve. In the old days, the hosts prepared the spice at home. Today it is produced and marketed throughout the country.
Its most popular use is for seasoning boiled eggs, potatoes and lamb dishes.
It is also suitable for green salads, as well as for dishes of spinach, dock, nettle. It is used mainly for sprinkling ready meals, without being subjected to heat treatment, because it loses its aroma. It should be borne in mind that the spice contains a lot of salt and therefore it is necessary to reduce the total amount of salt in the recipe when using samardala.
It is prepared from dried and crushed leaves of wild garlic and salt.
Its taste is rich and goes well with lean soups, potato dishes and eggs.
Seasoning for eggs, potatoes, lettuce, lamb dishes, spinach, dock, nettles.
