Sprat (Trimoncium spelta), known in Bulgaria as dinkel, is an ancient wheat variety. By the Middle Ages, it is a major food in parts of the Middle East and Europe, gradually being replaced by wheat. Today the spelled is valuable in having a high protein content, grown in pure fertile soils without the need for artificial fertilizers, and tolerant to people sensitive to gluten. The spelled flour has a soft and sweet taste and its products have a soft, slightly brittle and soft texture.
Recommended use: You can use the spelled flour in any recipe requiring flour. Because of the lower gluten content, when combined with yeast, it is good to combine it with wheat flour.
