Sprat (Trimoncium spelta), known in Bulgaria as dinkel, is an ancient wheat variety. Up until the Middle Ages it was a major food in parts of the Middle East and Europe, gradually being replaced by wheat. Today, spelled is valuable in having a high protein content, grown in pure fertile soils without the need for artificial fertilizers, and is more tolerant to gluten-sensitive people. The spelled flour has a soft and sweet taste and its products have a soft, slightly brittle and soft texture.
You can use spelled meal to make any pasta that you would do with other flour, including cakes, biscuits, muffins, sweets and crackers.
