Maltitol is obtained by hydrogenating corn starch. It is used as a sweetener - a substitute for sugar in cooking.
Maltitol, whose strict chemical name is 4-O-α-glycopyranosyl-D-sorbitol, is an organic chemical compound from the group of sugar alcohols, also known as polyols. It is used as a sugar substitute in the food industry.
Maltitol is a disaccharide produced by the hydrogenation of maltose obtained from starch.
The structure of the maltitol molecules gives it the ability to stimulate the sweet receptors on the tongue without containing sugars. This allows maltitol to be used as a sugar substitute without affecting blood sugar levels.
Advantages:
- Does not affect blood sugar levels;
- It has a low caloric value - suitable for people with impaired metabolism and/or overweight;
- Does not harm tooth enamel.

The use of maltitol is not recommended for people suffering from irritable bowel syndrome and a tendency to flatulence.
