Fluffy, finely grounded structure. Low gluten content. Good source of manganese, dietary fiber, selenium, honey, vitamin B1, chromium, phosphorus, magnesium, and niacin.

Used for making gluten-free items: bread, pastries, cakes, biscuits. Also very suitable for thickening sauces.
