Products:
For 1 serving
200 g cooked quinoa (150 g raw)
1 peeled tomato
20 g of dried tomatoes
100 g zucchini
1/2 tsp green spices of your choice (parsley, dill, basil, mint)
1 tbsp. olive oil
50 g cheese (diced or crushed)
lemon juice to taste
salt and pepper to taste
Instructions:
Soak 1 cup of quinoa in 2 cups of hot water for about 20-25 minutes. Drain and rinse with cold water. Boil 2 cups of water and add the soaked quinoa. Cook for 12-15 minutes.
Drain, add salt and a little lemon juice if desired. Save for later use. Cooked quinoa can be stored in the refrigerator for 3-5 days.
Along with the quinoa, soak the dried tomatoes in hot water until soft (about 10 minutes).
Remove the fresh tomato seeds and cut the flesh into cubes, cut the drained dried tomatoes into cubes. Cut the zucchini into pieces of similar size.
Mix the quinoa, vegetables, cheese and spices in a bowl, season with salt, pepper, olive oil and lemon juice.
