The aroma and taste is fascinating! I love this dish!
500 grams of small potatoes
1 tablespoon of olive oil
2 cloves of garlic, minced
1 teaspoon Italian seasoning
1/4 teaspoon salt or to taste
2 dashes of paprika
1/3 cup grated parmesan cheese
1 teaspoon chopped parsley leaves
2 tablespoons butter, cut into small cubes
Preheat oven to 195 C.
Peel and rinse the potatoes, pat dry and cut into halves.
Heat the pan (preferably cast iron) and add olive oil. Add potatoes and fry until the surface is crispy. Turn to the other side and cook until lightly browned. Move the potatoes to one side and fry the garlic, sprinkle with Italian seasoning, salt and red pepper, mix. Turn off the heat and sprinkle with grated cheese and parsley on top. Put the pan in the oven, cook for 15 minutes. Add butter cubes on top of potatoes, serve immediately.
Cook's Note:
I used very small potatoes. If you have large potatoes, fry for 20 minutes or until cooked. You can also fry the potatoes immediately in the oven. Simply mix olive oil, garlic, potatoes, Italian seasoning, salt and red pepper with potatoes and follow the remaining steps. Roast for 20 minutes.
