250 g Palm sugar
Palm sugar dissolves, melts and tastes almost like white sugar, but it is not refined. It is extracted from the flowers of coconut palms by carefully collecting the flower nectar from them. This nectar is then naturally dried and brown crystals are formed – rich in vitamins and minerals, including potassium, zinc, iron and vitamins B1, B2, B3 and B6.
Palm sugar contains calories like any carbohydrate, but at the same time it has a low glycemic index. This means that these calories are absorbed into the bloodstream at a faster rate than calories from refined sugar. Therefore, it is suitable for people with problematic blood sugar, which increases rapidly when consuming white sugar or other sweeteners.
The glycemic index of palm sugar is 35. For comparison, that of honey is between 55 and 60, and that of white sugar – 105. With this index, it comes close to milk and cooked carrots, and all of them still have a unique slightly caramel taste.
Palm sugar can be used for sweetening and caramelizing just like regular white sugar.
