Yakso Shoyu is a Japanese cooking sauce made from fermented soybeans and wheat with koji (yeast containing a fermented culture of Aspergillus Oryzae). Koji fermentation takes more than 18 months. Amino acids, fatty acids and simple sugars released by the action of koji add a deep and rich flavor to the dish.
