Coconut, pumpkin and chocolate cookie recipe:
Necessary products: 50 g gluten-free flour, 30 g coconut flour, 80 g coconut sugar "Bionia", 1 tsp. baking powder, 1 tsp. Ceylon cinnamon, ½ tsp. ginger powder, 50 ml coconut oil, 10 tbsp. boiled pumpkin puree, pieces of dark chocolate.
Method of preparation: All dry ingredients are mixed. In a separate bowl, mix the coconut oil and pumpkin puree and add to the dry ingredients along with the chocolate pieces. The resulting sticky dough is stored in the refrigerator for 30 minutes. Preheat the oven to 180 °. Prepare a tray with baking paper and with a spoon place the dough from a distance. Bake the biscuits for 12-15 minutes, remove and transfer to a wire rack to cool.
