Baking powder is a raising agent for dough when baking a cake, muffin or biscuit. A white powder and increases the volume of the dough releasing carbon dioxide due to reaction between acid and base. In contrast to yeast, whereby it comes to fermentation of live microorganisms, baking powder used only chemical reactions.
Typically, the content of baking powder comprises baking soda and citric acid in a ratio of 2: 1 and additive - some kind of starch (maize), sometimes vanilla.
The amount of baking powder depends on the recipe, but cakes using about 1 teaspoon baking powder 1 cup flour.
