The fan on the back of the still blows the air horizontally - this means simply turning the trays from left to right for even drying as needed. There is no need to move the trays to different levels as in circular dehydrators where the airflow flows from the bottom up.

Food dehydration is definitely a type of process that needs to be monitored and corrected. If you notice that certain foods dry out faster than others, remove them from the dehydrator and store them in a sealed container or in a vacuum. If you notice that food items near the fan are drying faster, simply rotate the trays halfway through the process so that those foods are away from the fan.
What is the best way to store dehydrated foods?
Dried apples, pears and especially dried mushrooms quickly absorb moisture from the environment. This is why they should be stored in airtight containers or bags as soon as they cool. Vacuum sealing bags and vacuum containers are the most suitable, because without oxygen the products are preserved for a maximally long period.
Maintenance and cleaning
Before the first use, run the dehydrator empty for at least 1/2 hour at the highest temperature. Wash the trays after each drying by hand or in the dishwasher. The easiest way to remove dried-on residue is to soak the trays in warm water and after a few minutes, clean the stubborn dried-on food with a check or sponge.
