Ingredients for 4 servings:
1 kg fillet of salmon, ¼ cup extra virgin olive oil, 2 tablespoons lemon juice 150ml dry white wine, half a relationship fresh parsley, 5 green onions, 4 tablespoons pine nuts, chopped, 100 g bread crumbs, 20 g pink pepper, ground black pepper
For the sauce:
'50 Butter, half a tablespoon of flour, 150 ml dry white wine 2 tablespoons freshly squeezed lemon juice, ½ tablespoon ground Mastikova resin, 2 egg yolks, fresh parsley to sprinkle the finished dish
Turn oven heated to 180 degrees. Cut the fillet portions, season it with salt and ground black pepper and place on a baking tray. Mix olive oil, lemon juice and white wine, add the chopped parsley and green onions, breadcrumbs and pink pepper. Spread mixture over the pieces of fish. Bake fish covered with foil for about 20 minutes and no foil few minutes until golden brown.
Preparing the sauce:
Melt the butter in a medium-sized pan, add the flour and stir to avoid picking up lumps. Let the fire until the mixture get a golden color. Slowly add wine and lemon juice, stir constantly. Remove from heat when mixture obtain the desired density. Add the beaten egg yolks and ground Mastikova resin.
Pour fish sauce and then serve sprinkled with chopped fresh parsley.
