1. Healthy bread with beneficial properties of: flour type 500; 2.5% top-notch flour, 10% wheat bran
2. Dietary, diabetic bread from: rye flour, 3% topmeat flour, 10% wheat bran.
3. Dietary, diabetic bread from: rye flour and wheat flour first grade / mixture in equal ratio /, 3% topped floury flour, 10% wheat bran
Topinambur flour is added when the dough is mixed in a dry form and mixed thoroughly with it. The percentage of topmined flour is indicated by the total flour weight.
The recommended maximum dose for the addition of ground apple meal is 6% in order to preserve the good organoleptic qualities of the product.
Practically, when making bread, pizzas, buns, cheese and any type of pasta, you will optimally substitute about 3%, up to 6% of the total flour weight without changing the product formulation.

Cream-soup of topinambur with mushrooms
Products:
Topinambur chips - 80 g;
Mushrooms (fresh) - 200 g;
Carrots - 100 g;
Onion onion - 50 g;
Oil - 50 years
Preparation:
Topinaambery chips are boiled for about 8 minutes. Carrots, chopped mushrooms and onions are finely chopped and stew in fat. Add to boiled topinambur and the whole mixture boil another 10 minutes. After being removed from the fire, it is broken down with a mixer until a homogeneous mass is obtained. The soup is served sprinkled with fresh dill.

Stuffed peppers with rice and topinambur
Products:
Topinambur chips - 100 g;
Garlic 6-7 cloves;
Rice - one water cup;

Peppers - 12-15 pieces;
Black pepper minced and cumin - to taste.
Preparation:
Rice is cooked until semi-prepared. Carrots are grated on a large grater, the onions are sliced, they are stewed in the fat. Garlic crumbles. Boiled for about 8 minutes topinambur
chips drained. To make stuffing, rice, onions, carrots, crushed garlic and topped black chips are combined into a large pot. Add salt and spices, mix thoroughly. The peppers are cleaned by handles and seeds, cooked in boiling water, and then filled with the finished mixture. They are placed in a tray, poured with cream and baked in an oven.

Products:
Topinambur chips - 100 g
Fresh milk - 150 g
Three eggs;
A parsley connection;
Yellow cheese - 150 g
Preparation:
Topinaambery chips are boiled for about 8 minutes. Drain from the water and place it in a tray. Sprinkle with grated cheese, oregano and finely chopped parsley. Sprinkle with milk and eggs. It gets hot.

Delicatessen bread
Products:
Topinambur chips - 30 g;
Spelled flour - 600 g;
Maya - 30-40 years;
Sugar - 1 teaspoon;
salt - 1 teaspoon, ayrian;
Nuts or seeds assorted / crushed almonds, sunflower or pumpkin seeds, optionally raisins /;
Spices / a combination of dry garlic, dill, savory, oregano / - a total of 3 tablespoons;
Red pepper - 1 teaspoonful;
Preparation:
Dissolve the yeast in arama, add sugar, salt, a little of the flour. Allow to stand for about 15 minutes. Topinambur chips are boiled for about 8 minutes. Flour, cooked chips (together with the water in which it was cooked), spices and nuts are added to the initial yeast. Add aryan as much as necessary to obtain a smooth dough. Allow to rise for about 1 hour and small loaves of bread are formed from the dough. Their surface is smeared with ayrian. Bake at 180 degrees 50-60 minutes.
Note: Sparkling flour can be replaced with any other choice and preference.

Cooking with topinambur
Products:
Topinambur chips - 100 g;
Flour - 400 g;
Fresh milk - 100 g;
Eggs - 2 pieces;
Salt - half a teaspoonful.
Preparation:
The yeast dissolves in warm milk, adds a glass of flour, mixes very well with a pre-
broken eggs so as to obtain a smooth, uniform mass that is left to stand in a warm place for 2.5 hours. Meanwhile, boil the topped chips for about 8 minutes. Once the dough is well cooked, add the drained chips left over to the flour and salt. Place the dough for a long time, place it in a greased baking dish and cook at 200 degrees.
