A wonderful pie with oatmeal, fruit, bananas and some chocolate. I love it because you can use any berry fruit you have on hand, so do not hesitate to use your favorites. It is also a great way to use a ripe banana. Enjoy it!
ingredients:
2 cups oatmeal
1/3 cup brown sugar +1 tablespoon on top and
1 tsp Baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup raspberries (and other berries will do)
1/3 cup Blueberries
1/2 cup mini chocolate chips
2 cups milk (can skim)
1 large egg
3 tablespoons butter, melted
2 tablespoons vanilla extract
1 ripe banana, peeled, cut into slices about 0.5 cm
Preparation:
1. Preheat oven to 200 ° C
2. In a large bowl, mix with oats, sugar, baking powder, cinnamon, salt, half fruit and half a chocolate. (Save the other half of fruits and chocolate top). In another large bowl, stir together the milk, egg, butter and vanilla extract.
3. Add the mixture of oats into the prepared baking dish. Arrange remaining berries and chocolate on top. Add banana slices to the top then pour milk mixture over all. Gently shake the pan to help the milk mixture to reach the entire mixture with oats.
4. Bake 35-40 minutes or until top is golden brown gain and milk mixture is absorbed. For extra flavor on top sprinkle a tablespoon of brown sugar. You can add brown sugar before baking or immediately after removing from the oven oatmeal.
5. Once cool, cover to not dry and refrigerate. Before serving can warm oatmeal in the microwave or oven in just a fan not to dry.
Note *
- After melting the butter, allow to cool a little before adding to the mixture of milk and eggs. If no egg will cook and become lumpy / pieces and will not be nice.
- You can also use regular chocolate chips, not necessarily mini size!
