Products:
3 medium zucchini
2 eggs
200 g of cow's cheese
150 g of flour
100 g breadcrumbs
50 ml of oil
1 pinch of salt
1 pinch of black pepper
½ connection fresh parsley
Preparation:
Grate the zucchini as previously peeled. Put them in a large bowl and sprinkle with salt. It will make the water from the zucchini drain. Then transfer them to a colander and press by hand to remove excess water.
Return them to the bowl. Knock the two eggs on them. Add the breadcrumbs, cheese, parsley, which you have saturated beforehand (without the stalks). Knead the mixture well with your hands and form meatballs (it is good to have a flatter shape so that they are easy to fry).
Roll each of the meatballs in flour. Heat the oil in a pan over medium heat. Fry the pumpkin meatballs on both sides for a few minutes.
