Necessary products:
1 1/2 cups whole milk
1 3/4 cups cream
1 tablespoon cornstarch
2 tablespoons matcha / kind of green tea powder /
2/3 cup sugar
1 pinch salt
Method of preparation:
In a small bowl, combine 2 tablespoons of the milk with the cornstarch. Mix well and set aside.
In another bowl, combine 1/2 cup cream with green tea. Stir vigorously to obtain a homogeneous mixture.
In a medium saucepan, combine remaining milk, cream and sugar and cook over medium heat until the sugar has melted - about 3 minutes after starting to simmer.
Remove milk mixture from heat and add this to it with cornstarch. Stir well and return to the heat. Simmer about 1 minute on medium high heat until thickened.
Gradually pour the hot milk mixture into the bowl with cream and tea matcha and season with a pinch of salt. Mix well.
Fill a large bowl with ice water and place it in a bowl with ice cream mixture to cool for 20 minutes, occasionally you stir.
After cooling completely, pour the mixture into a container for freezing of suitable size and store in the freezer for at least 4 hours.
Garnish as desired and serve.
