Cashew (Anacardium occidentale; syn. Anacardium curatellifolium A.St.-Hil, also known as Indian peanut, Indian cashew) is a tree of the genus Anacardiaceae. It originated in Brazil, with Portuguese researchers moving the tree to other countries. Today it is found in Mozambique, Tanzania, Kenya, India and Brazil.
The real fruit of the tree grows on top of the cashew apple. It has the shape of a kidney and first grows on the tree, after which an apple is formed from its stalk. There is only one seed in the fruit, and although this is the correct botanical term, everyone calls the inside of the fruit a cashew nut. Sometimes more than one cashew nut grows on one apple.
Cashews are wrapped in a double shell, so the processing process is long and complicated. First, the fruit is baked in the pod so that it can break. Then only the nut wrapped in the zipper remains, which must be removed by hand. This is one of the reasons for the high price of cashew nuts.
