Then squeeze it and wash under running water.
In the pot in which you will boil it, pour water in a ratio of 1 to 3 - for 1 cup of beans 3 cups of water.
After the water boils, simmer for 45-50 minutes or until soft.
Add salt after it softens.

400 grams of cooked azuki beans
2 tablespoons olive oil
2 large cloves garlic (cut into flakes)
220 grams of cherry tomatoes (cut into quarters)
200 mushrooms (thinly sliced)
1/2 teaspoon paprika
1 teaspoon dried basil
1 teaspoon dried oregano
300 g spinach (finely chopped)
fresh parsley for sprinkling (chopped)
100 grated hard cheese to sprinkle
Preparation:
Heat a large skillet with olive oil and garlic over medium heat for a minute until the garlic begins to fry. Add the chopped cherry tomatoes and mushrooms, red pepper, oregano, dried basil, chili. Cook for about 5 minutes, until vegetables are tender. Stir to avoid burning. Add the tomato puree. If the mixture is dry, pour a few tablespoons of boiling water or broth. Then add the finely chopped spinach and wait for it to soften.
Finally add the cooked azuki beans and half a glass of water or broth and stir. Leave the dish on low heat until the liquid evaporates. Sprinkle with grated cheese and parsley.
